This is a simple, healthy meal for busy days. My nephew, who is very picky, eats this. The chicken stays very moist.
4 chicken breast halves, skin and fat removed 1 small red bell pepper, seeded and chopped teaspoon salt teaspoon pepper teaspoon paprika 1 tablespoon olive oil 1 medium onion, chopped 3 cloves garlic, minced teaspoon dried rosemary leaves 1 can (14 oz) crushed tomatoes 1 package (10 oz) frozen peas
Season chicken with salt, pepper and paprika. In a medium skillet,
heat oil over medium-high heat. Add chicken and brown; drain. Put
chicken in crock pot. In a small bowl, combine remaining
ingredients, except peas. Pour over chicken. Cover and cook on low
for eight hours, or high for four hours. One hour before serving,
add frozen peas. Serve over rice, cooked separately.
